Hearts of Palm Salad

Life with two little active boys, thank G‑d, is hectic so adding recipes to this area takes a while for me. I hope to do so more often but for now...h ere's another easy and delicious recipe that I'm sure you'll enjoy!

When my husband and I first got married 3 years ago I didn't know the first thing about cooking. All this is over here is me sharing what I've learned so far as I continue to learn on the job :).

Ingredients:

1 Avocado diced

1 can of Hearts of palm cut into pieces

1 large tomatoe diced or a container of cherry tomatoes cut into halves

1 bunch of scallions sliced.

*TIP: Try to cut everything to the same size range. Except the scallions.

Dressing: Equal parts of Lemon and Mayonnaise with Salt and Pepper to taste.

Directions: Pour dressing on top of the cut up ingredients and mix gently so it doesn't get too mushy.

I always serve this with the fish course (it's great with Challah!) on friday night so if you ate at our apartment you've probably eaten this. And if you haven't joined us for friday night dinner yet... well... let's make sure it happens soon. On that note, I hope all the friends we made over the High Holidays stay in touch over the year. Oatmeal Cranberry Kugel

"Ha'omer davar bishem omro mayvee geulah l'olam"  Loosely translated: One who says something in the name of the one who originally said it brings redemption to the world.

So to give credit where credit is due, I got this recipe from my sister-in-law Shternie Deitsch. Her daughter calls it 'purple kugel' and you're basically not considered part of our family if you don't call it that now! It's great to serve as a sweet side dish to meat or chicken.

Ingredients:

2 Cups of Oatmeal

2 Cups of Flour

1 Cup of Brown Sugar

1 Cup of Oil

16 oz. can Jellied Cranberry Sauce

Directions: Preheat oven to 350º. Mix the 1st four ingredients together and pour 3/4 of the mixture on the bottom of a 9x13 pan. You can use an 8x8 pan but just bake it a little longer. Spread the sauce on top and then sprinkle the rest of the mixture on top. Bake uncovered for 45 minutes.

Pumpkin Chocolate Chip Cake

This is a classic cake recipe but the pumpkin in it makes sure it's always moist. I also LOVE that it does not involve margarine and still manages to be insanely delicious. It's been passed around my family so much that I'm totally not sure who it originated from so credit to my entire extended family. This is a staple in all our homes. This cake is incredible. Believe me.

 2 cups sugar

1 cup oil

4 eggs

mix the above together.

add:

2 teaspoons baking sonda

2 teaspoons baking powder

1 teaspoon cinnamon

2 cups flour

16 oz can Libby's 100% pure pumpkin

1 cup chocolate chips

 Bake on 350 for 1 hour in a greased tube pan or 9x13 pan.
